Lemon Chicken and Potatoes is one of those mindless Monday night suppers that I tend to go to when I’m running low on prep time. This one pan meal is easy to make and it’s sure to be a hit around the dinner table! There’s a good chance you already have most of these ingredients kicking around, and in about 10 minutes, you can have this cooking in the oven. You can’t go wrong!
Lemon Chicken and Potatoes
Lemon Chicken and Potatoes is one of those mindless Monday night suppers that I tend to go to when I'm running low on prep time.
Ingredients
- 1 package chicken thighs
- 3-4 potatoes peeled and cut into wedges
- 2 tbsp salt
- 1 tsp pepper
- 2 tsp oregano
- 1 tsp cumin
- 4-5 garlic cloves sliced
- 4 bay leaves
- 3 lemons juiced
- ½ cup olive oil
- ¼ cup water
Instructions
- Preheat oven to 375 F.
- Peel and slice the potatoes into wedges and place in a large pan.
- Combine the salt, pepper, oregano, and cumin, and generously sprinkle over the potatoes.
- Add the remaining seasoning to the chicken and place the seasoned chicken in the pan with the potatoes.
- Add the sliced garlic cloves and bay leaves to the pan.
- In a small bowl, juice the lemons and mix the olive oil in with the lemon juice. Whisk well to make sure there is minimal separation, then pour the lemon juice mixture on top of the seasoned chicken and potatoes.
- Add the water and place the pan in the oven for 45-60 minutes, or until the chicken and potatoes are golden and cooked through.
