Green Bean Greek Salad

Ingredients

  • Green Beans
  • Roasted walnuts
  • Chopped Red Onions
  • Tomatoes
  • Cucumbers
  • Pitted Black Olives
  • Green Peppers
  • ¼ cup Olive Oil
  • cup Balsamic Vinegar
  • 1 Clove of garlic
  • 1 tsp Oregano
  • ½ tsp Salt
  • 1 tsp Pepper
  • tsp Dried chilli flakes
  • Feta

Instructions

  • Place the walnuts on a baking sheet and place in the oven on broil for 5 minutes.
  • Clean the green beans and snap off the ends.
  • Place the beans in a large pot of boiling water and cook them for 7 minutes. Do not overcook!
  • Take the beans from the water and place them immediately into a bowl of ice water. This little trick keeps the beans vibrant with colour! 
  • Remove from the ice water, dry the beans in a clean towel or paper towel, and put them in a large bowl.
  • Assemble the salad! Add the walnuts, red onion, tomatoes, cucumbers, olives, and green pepper.
  • Add the dressing and stir.
  • Crumble feta on top and serve!

Notes

To make the dressing:
Add olive oil, balsamic vinegar, garlic, oregano, salt, pepper, and dried chilli flakes to a bullet, blender, or food processor, and blend for 15-20 seconds. Make sure the garlic is blended well and add it to the salad.
