This dish reminds me of Christmas Eve! Every year, I host our family after carols for a Christmas Eve seafood feast! There, I make piles of seafood options to choose from, but this one is always the first to go! It’s creamy, savoury, and then there’s just enough sweetness on the end. My favourite way to serve this is with a sliced baguette that’s been drizzled with olive oil, salt and pepper, and baked at 375F for about 10 minutes. Just long enough that the outside is crispy, but the inside is nice and soft. Give it a try!

Ingredients

  • 8-10 Jumbo Shrimp, peeled and deveined
  • 1 small white onion, minced
  • 3 cloves of garlic, minced
  • ¼ cuo olive oil
  • 2 tbsp olive oil
  • 2 cups crushed tomatoes
  • 1 tbsp sugar
  • Pinch of salt and pepper
  • Feta Cheese

Instructions

  • Preheat oven to 375F
  • In a large frying pan, heat 2 tbsp olive oil on medium heat, and lightly sear the shrimp on each side. Do not overcook!
  • Remove from the pan and place the shrimp in a medium baking pan of your choice. Yiayia uses a ceramic pie plate, but you can use anything you have on hand!
  • Add ¼ cup of olive oil back into the frying pan on medium heat. Once it heats up, add the minced onions and the minced garlic.
  • Once the onions are translucent, add the crushed tomatoes, sugar, and the salt and pepper.
  • Let simmer for 2-5 minutes, then pour over the shrimp.
  • Crumble the feta on top (as much as you want!) and place in the oven for 15 minutes.
  • After 15 minutes, turn the oven on broil (or 500 F) and bake for another 5 minutes to brown the cheese.
  • Garnish with fresh parsley, serve with fresh or crusty baguette, and enjoy!
