Green Bean Greek Salad
Ingredients
- Green Beans
- Roasted walnuts
- Chopped Red Onions
- Tomatoes
- Cucumbers
- Pitted Black Olives
- Green Peppers
- ¼ cup Olive Oil
- ⅛ cup Balsamic Vinegar
- 1 Clove of garlic
- 1 tsp Oregano
- ½ tsp Salt
- 1 tsp Pepper
- ⅛ tsp Dried chilli flakes
- Feta
Instructions
- Place the walnuts on a baking sheet and place in the oven on broil for 5 minutes.
- Clean the green beans and snap off the ends.
- Place the beans in a large pot of boiling water and cook them for 7 minutes. Do not overcook!
- Take the beans from the water and place them immediately into a bowl of ice water. This little trick keeps the beans vibrant with colour!
- Remove from the ice water, dry the beans in a clean towel or paper towel, and put them in a large bowl.
- Assemble the salad! Add the walnuts, red onion, tomatoes, cucumbers, olives, and green pepper.
- Add the dressing and stir.
- Crumble feta on top and serve!
Notes
To make the dressing:
Add olive oil, balsamic vinegar, garlic, oregano, salt, pepper, and dried chilli flakes to a bullet, blender, or food processor, and blend for 15-20 seconds. Make sure the garlic is blended well and add it to the salad.
