Keftedes (Greek Meatballs) with Perfect White Rice

Ingredients
  

Keftedes (Greek Meatballs)
  • 2 lbs lean ground beef
  • 1 yellow onion, finely chopped
  • 4 cloves garlic, finely minced
  • 2 tsp oregano
  • 2 tsp salt
  • 1 tsp pepper
  • ¼ tsp chili pepper flakes
  • 1 cup milk
  • cups panko breadcrumbs
Perfect White Rice
  • 1 cup rice
  • 2 cup water
  • ¼ tsp salt
  • 2 tbsp salted butter

Method
 

Keftedes (Greek Meatballs)
  1. Preheat oven to broil, or 500 F
  2. Add all the ingredients to a large bowl and mix all together using your hands.
  3. Roll out the meatballs by measuring approximately one heaping tablespoon and placing them on a large baking sheet.
  4. Place them on the top rack in your oven and broil for approximately 12 minutes, or until the tops are nice and brown and the meatballs are cooked through.
  5. Serve with your choice of side and enjoy!
Perfect White Rice
  1. Add the rice to a medium pot.
  2. Rinse the rice thoroughly until the water is clear. 
  3. Drain the water then add 2 cups of water and the salt.
  4. Place the pot over medium-high heat and bring to a boil. 
  5. Once the rice is boiling,  turn the heat down to low and cover the pot for 10 minutes.
  6. Once the rice is cooked, add 2 tbsp salted butter and stir it in until the butter is melted.
