Peel and grate your cucumber. Place it in a colander over a bowl to strain the juice. Add the salt to the cucumber and set aside.
Combine the rest of the ingredients in a large bowl and mix thoroughly.
With your hand, squeeze the excess liquid from the shredded cucumbers (don’t skip this step or it will ruin the consistency of your Tzatziki!) and add it to the tzatziki. Stir to combine and place in the fridge. This gets better the longer it sits refrigerated (especially if you’re using fresh dill). Keep in an airtight container in the fridge for up to 10 days.
